Ingredients:

8 oz dried rice noodles

1 lb boneless chicken, thinly sliced

1 red bell pepper, thinly sliced

1 yellow onion, thinly sliced

2 cloves of garlic, minced

1 tbsp vegetable oil

2 tbsp soy sauce

2 tbsp oyster sauce

2 tbsp brown sugar

1 tbsp rice vinegar

1 tbsp fish sauce

1 tsp red pepper flakes

1 tbsp lime juice

2 eggs

2 green onions, thinly sliced

1/4 cup chopped peanuts

Cilantro, for garnish

Preparation time: 15 minutes

Cooking time: 15 minutes


Instructions:

Soak the rice noodles in warm water for 15 minutes or until they are soft. Drain and set aside.

In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, rice vinegar, fish sauce, and red pepper flakes. Set aside.

In a large skillet or wok over medium-high heat, add the vegetable oil. Once hot, add the chicken and stir-fry until cooked through, about 5 minutes.

Add the red bell pepper, yellow onion, and garlic to the skillet and stir-fry for another 2-3 minutes, or until the vegetables are just tender.


Push the chicken and vegetables to one side of the skillet, and crack the eggs into the other side. Scramble the eggs until cooked.

Add the soaked and drained rice noodles to the skillet, along with the sauce mixture. Toss everything together until the noodles are well coated and heated through, about 2-3 minutes.

Turn off the heat and add the green onions, chopped peanuts, and lime juice. Toss everything together and garnish with cilantro.

Serve hot, and enjoy your Pad Thai with some lime wedges on the side.


Tips:

You can also use other protein options such as shrimp, tofu or even beef.

Adjust the amount of red pepper flakes to your desired level of spice.

Pad Thai sauce can be made in advance and stored in the refrigerator for a few days.

You can also add some bean sprouts or other vegetables of your choice.

Some people like to add a tablespoon of tamarind paste to the sauce for a more authentic flavor.
